This course will concentrate on basic purchasing principles with some emphasis on obtaining food for the College's teaching labs. The student will participate in the costing of recipes, food items, and total food costing as related to the food service industry. Information will be gathered from inventories and purchases to obtain food cost percentages. The use of federal grades, specifications, and purchase orders will be used to obtain the best possible product for the purpose for which it is intended. Usually offered Fall and Spring semesters.
This is a non-credit, workforce development course — a lower-cost way to build practical skills without enrolling in a full degree program. It's a good fit for anyone changing careers, brushing up on skills for a current job, or exploring the subject before committing to a credit-bearing program.
Coursework is delivered online through SUNY Niagara's learning platform and runs the length of the semester, with topics building week to week. Upon successful completion, students receive a Certification of Completion to document their coursework.
All Online courses through Workforce Development are open to the public, non-credit, and offered to students at a discounted rate.
