What is sourdough and how can it be beneficial towards your health? My motivation behind this project is from a love of bread making and of sharing my knowledge of how sourdough can be beneficial. The larger significance of this project is to educate people of the health benefits and versatility of sourdough bread. My background knowledge is from a developing course of learning from the Niagara Falls Culinary Institute’s Baking and Pastry Arts program, an internship at Breadhive Bakery & Cafe here in Buffalo, and a general interest in bread. The points that best summarize my exhibit are:
  • What is sourdough?
  • What makes sourdough a sourdough?
  • How it works.
  • How it can help your digestive tract.
I will present results from products with different levels of aged sourdough starter from two days, to one week, and two weeks and how each of the products differ and why. Sourdough Living
